We are going to Tunisia for the first time in early October and have just been told that the Iberostar Phenecia does not operate air conditoning at this time. Can anyone tell me how hot it will be and if air conditioning is really necessary.

A/C is not necessary at this time, yes it's very warm in the daytime, cool in the evening, but not hot enough to warrant A/C.
I don't think any hotel has A/C at this time.. maybe down in the south near the sahara but not coastal resort hotels.
