Trying to get away for a few days (somewhere warm) ideally flying Boxing Day or couple days after.
Does anybody know of a website that says who goes where and what day?

I'm wondering if you mean like a flight screenscraper that checks a lot of different flights.
I some times use the flight/travel bit of http://www.moneysupermarket.com and I think there is one called skyscanners.
The only trouble with these is that they dont cover all airlines. So they might not do the budgets or easyjet. Think you might be too early for the budgets anyway for 26th or 27th December.

What year are you trying to book? 2009?
You could have a look at skyscanner.net/ see if this is what your looking for.
For working out the basic question of who goes where try http://www.europe-airports.com/ and work through prefered airports. Use the link to the actual airport and find their schedules. Note some split charters off and may not show them at all.
