Returned from Cyprus 2 weeks ago (our first visit) we ate out 8 times in 2 weeks and have to say didn't have salad or an omelette once.
Vegetarian food was lovely from vegetables in lovely sauces, mousakka, went Mexican one night.
We were staying in a villa and my youngest son wanted Quorn burgers - over 4 euros in the supermarket!!!!

Cypriots are big meat eaters, but most restaurants offer at least a couple of veggie alternatives, the Big Beans dish (can't remember what it's called) and veggie mousakka.

We stayed in Coral Bay. We were about 20 minutes walk from all the restaurants and shops but that was nice really.
Looking at Cyprus again for 2010 may try somewhere different not sure as yet. When we were looking for this year we looked at many places including Latchi, Polis and Pissouri (visited while we had the car and must say I preferred Coral Bay) although to be fair when you are visiting a place briefly you don't see it all.

Out of those, give me Pissouri every time. The village, that is!

We spent the day at Pissouri and the beach was lovely. Only got to the road at the back of the beach - sure there must have been more restaurants elsewhere?
We are looking at Protaras area at the moment - would like to get a villa where you don't need a car for the whole 2 weeks.

The Cypriots are on the whole, big meat eaters but during Lent you will find the Orthodox religion means fasting of all meat products, so you will find there are plenty of vegetarian dishes available.

For 2010 - I understand UK and Greek Orthodox Easter fall at the same time, so that may be a good time to make your visit ;)

wasn't paying particular attention to the veg options to be honest but....

vegetarian lasagne was on the menu in places, varying veg pizzas, veg curries...
then you get things like cold bean salads (check out the point bar restaurant in Pernera,it has a massive selection of meat and none meat dishes which you can pick and choose from, as well as selecting your own sandwich fillings and bread types etc)
as you say omelettes in most places and you will get veg burgers in some places
... fish?.. lots of that... including fish meze...

basically you can't go wrong.. look around, read menu's and see ....
