during the day roxy's opposite the royal beach in fenals will be open (as long as the royal beach is) as will the picadilly on lloret seafront.
both have sport on the tv's - and both do ok food.
at night, the robin hood under roxy's, the picadilly and various bars in the centre, look for the bunjee crane near the casino royal hotel, will be open.
there may not be a whole lot going on, but if you are near the robin hood they stay open late and the atmosphere is usually good.
most bars don't open till easter, but there are usually enough in the centre to give you some choice
