Our 19 year old son would like to come to vegas with us this year but are we right in thinking he would be limited to where and what he can do and if so is there anywhere we can find any info on the laws and restrictionst to under 21s.
We also keep reading about families with young children going and having a great time but as I have said before what are they allowed to do at nights around the casinos etc.

In a few words - not a lot. The Casinos have strict 'over 21 only' policies, which are usually vigorously enforced. In the casinos there will be walkways through the casinos - often marked by the patterns in the carpet - for folk to pass through BUT under -21s cannot even stand and watch - they'll get moved on by casino security.
Most casino table games will call a halt at some point and do a sweep around the players to verify age - even if it's plainly obvious that everyone is over 40!
For things for under 21s to do, yeltzman's link gives a few good ideas, but for 'around the casinos', forget it.
I have heard people say that they ask for proof of age if you look under 35. They have their gaming licenses to think about and the Gaming Control Board are very strict. There are lots of things to do, in Las Vegas, but none of them are near the casino floor.
