Sorry to hear that you had a bad time, hope you're better now...

As far as a complaint is.. well if it stated all inclusive was until 2300, and it finished at 2200 then yes, you have a complaint. Did you bring this to the attention of your rep/fill in a complaint form whilst in resort?
As for the drinks on the beach, how did you test this? - was there anything to stop you getting your own drinks and taking them there, or was it a case of there being no free waited-on service?

Poor food, again, did you mention/complain/fill in form whilst in resort? - if no, then all you can do is tell the TO either by a poor assrssment card, or via a letter, otherwise, put it down to a bad experience (and don't forget to put a factual review in for HT.) But again, I doubt that you'll get much of a response, other than a standard letter of acknowledgement.

As for your accident, well I'm fairly certain that unless there was something in your room that was unsafe (and you had previously reported it) then I'm afraid it's bad luck.

Hi have looked at a few sites selling this hotel and they all say the Ai at the bar finishes at 10pm.

If it stated AI till 11pm and it finished at 10pm, yes you have cause to complain. Did you mention it while you were there?
Food I think is so subjective, that I really don't think there is going to be a lot you can do about that.
I'm sorry to read of your fall, it sounds like you really took a tumble. As merseygull says, unless there was something unsafe in your room that you had reported, I don't think you will be able to do much about that either.
