have to say the "quiet bars and restaurants" definitely applies to Sanur!
Have a look at this site which will give you info on diving. I think most of the diving sites are to the north and east of the island. Talumben, Pemuteran and Menjagen are three of the sites.

If you get your concierge to phone them and book a meal they used to send transport to pick you up from your hotel.

A great dining experience.
