Our only resort report for Sozopol gives some tips for accommodation.
As far as visits to Istanbul/Plovdiv are concerned, I can't really help with any specifics - Istanbul trips are operated from most of the larger resorts, even if an organised trip isn't available in Sozopol, coaches travel there from most large towns/cities, so you would be almost certain to be able to get there from Burgas.
Plovdiv should be readily accessible from Burgas, probably via Stara Zagora.
