Not stayed at them but I am often on the Egypt forum, the two Sharm AI's that are mentioned all the time as good family hotels are The Coral Sea Resort and the Hilton Sharks Bay.
It might be worth reading a few reviews of these whilst waiting for some more specific advice.
There is also an AI hotel called the Coral Hilton in Nuwebia that seems very popular which you could also read up on.
