Okay, it hasn't got a beach but I would recommend Kalkan to you. It ticks all your other boxes, you've got Kas, Kekova, The Lycean Way and Myra for your historical fix. Plenty of restaurants and bars without being tacky touristy. The beach is a dolmus ride away at Patara. Have a look at website Enjoy Kalkan for more info. If you scroll back to January 15th, you will find the Discussion on Kalkan topic.

Problem is that Kalkan is not renowned for it's AI's

Have a look at Side, or anywhere on the Bodrum Peninsula.

Both would seem to fit your list of requirements.

Turunc or Akyaka? Google both of them - Akyaka has the best beach, sandy & shallow a long way out, perfect for small children. We think Turunc is better restaurant wise, very compact with loads of restaurants for the size of the village. Both resorts are in beautiful scenery

Patara :) beautiful AND totally uncommercialised but very small.

dalyan,i am becoming a little dalyan bore but i am completely enchanted by the place, the beach granted is a short bus/boat ride away but this is a minor irritation compared to the friendlieness and charm of the village/town,i have travelled to most areas bar the antalya/alanya area and dalyan is by far my favourite, also recommended for a small unspoilt feel would be yalikavak and selimiye/bozborum/datca although personally iam not over keen on the latter.kalan and kas have been mentioned kalakan in my opinion is a small british colony it is pretty and upmarket but a bit emporers new clothes if you get my drift and pathetically expensive in comparison to "real turkey". kas however is pleasent enough .

I'd second the Dalyan recommendation having visited earlier this year. Having holidayed in both Dalyan and Oludeniz, I feel that Dalyan is certainly the more traditional of the two. The main street through Dalyan is primarily geared up towards the British tourist but away from here (for example around the market area and the back streets) Dalyan has managed to retain its traditional charm with locals going about their everyday business mixing freely with holidaymakers.

There is a large number of good quality restaurants, plenty of bars catering for all tastes, and the riverside setting is lovely. Although no beach in resort, the 40 minute boat ride to the beach is a joy with the wonderful scenery on offer. Well worth considering Dalyan!

I would recommend Adrasan or Cirali both lovely little Turkish resorts, Olympos is near by and other historical sites. They are both still very Turkish and have some lovely restaurants and a nice beach. Adrasan is also called Cavus Bay, no tour operators goes to either resort so have to book direct. Look at http://www.cavus-bay.com to see some ideas and also google Cirali. You fly into Antalya and then get picked up by the hotels for a fee.

Ortakent is nice and not commercial, the beach there is lovely too.

Datca fits the bill. It's a harbour village with no european mass tourism. It is mostly frequented by Turkish families and europeans who visit independently. The area around it is known for its oustanding beauty and at the end of the peninsula there is Knidos.
