http://www.shelleyshotel.com/index.htm close to the Gateway in Colaba, been a few years since I stayed in Mumbai but Colaba causeway has tons of shops and eating places to cater for your needs. Not sure how much a Taxi from the airport is but there is a taxi park right outside the Airport, daytime is chaos and can take a good hour or so due to the traffic, night time its about 25 mins. The weather is superb in Mumbai this time of year, in the 90`s. Take a trip to Elephanta Island from the Gateway(don`t use the guides that meet you from the boat), Chowpatty beach is worth a look, the dhobi Ghats (open air clothes washing) and a drive down the promenade and around malabar hill (Bollywood stars).
I will leave the latest Goa bits to people who have just returned wityh more up to date info, hope the info is usefull

There is a pre-paid taxi office by the arrivals exit at the international terminal. It has one window facing inside on the last corridor to the exit or you can exit the terminal turn back right and you can get to the same office from the outside. They have a fixed rate card and issue you with a ticket which you take across the road to the cab rank. Last February the fare from the Airport to Central Station was 350 Rupees including a small supplement for baggage.
Mumbai to Goa, there are several options.
Air. Several internal airlines fly from Mumbai to Dabolim, can be fairly cheap, several can be booked on-line.
Train. Two options, either an all-night or an all-day run. Trains leave Mumbai Central or Dadar. There are a whole range of accomodiation types and classes. First Class air-conditioned isn't that expensive.
Thivim is the best destination station for North Goa, Margao(Madgaon) for South Goa. (I'm a new member so I can't post website link as yet, search for konkan railway)
Bus. Busses run from the bus station in Mumbai near the Central Railway station.
