I've flown from Cardiff to Bangkok via Amsterdam using KLM and China Airlines(actually Taiwanese airline). Most of the Far East specialists will be able to tailor make it for you - Tradewinds sometimes use them. Usually though we go from Heathrow as this provides a much greater choice of flights.
I have used several tour operators for trips to Thailand but usually tradewinds have come out cheapest.
Having looked at reviews I think that probably Phuket ticks all our boxes for our 1st holiday in this area.
Its worth doing a bit of research on Phuket deciding which resort suits you as there are a number of resorts on the island...some lively some quiet.
