I can't give you any specific recommendations, but you will find excursions being advertised virtually everywhere in Sunny Beach - in shops/booths/at the roadside, etc., so you won't be lacking in choice.
Whether all of the options are adequately insured, have English-speaking guides, etc., is another matter......
