I use Kayak.co.uk
If you register with them, they will send you a weekly or daily update of flight prices for your preferred dates. When I see one I like, I look at expedia, netflights, the airline's own site and a few others and see who comes up with the best deal.
There is no quick and easy way. You have to do your homework.

Thanks for such a quick reply I appreciate it. I will register with Kayak and take it from there.

Chix - not sure what month you are looking at, but from Glasgow for September we have found some reasonable flights to Vegas with US Airways - Netflights seem to be slightly cheaper, and booking direct may even be a bit cheaper if the exchange rate improves on the flights we have our eye on.
Currently trying to talk ourselves into booking - just not 100% sure whether prices might go up or even down!

Thanks Lesley74, I will check it out. We are looking at May but September could be an option.
You should get lovely weather whichever of those you choose.
