No, I haven't cruised with Fred Olsen, but it might help if you were able to say about what sort of infirmity it is ............. for example some cruise lines have specific dialysis facilities aboard, and as I suffer from OSA, I am always careful to choose a holiday where there is a powerpoint close to the bed to run my CPAP .........................

My suggestion is that you might like to look at the Fred Olsen website and see what they offer in the way of practical help for infirm folk - perhaps a special cabin that can accommodate wheelchairs etc, or take your courage in both hands and contact them directly via their email address/question template shown on the website.
