The main areas of activity outside of your hotel are Namma Bay and Old Sharm. Your hotel will have a shuttle bus to NB normally for a nominal charge, or you can get cabs.
NB is where people tend to go if they fancy a change from their hotel of a nightime, lots of restaurants, bars & shops, Traditional and International places including the Hard Rock, TGI's, Pizza Hut.
If you are going with Thomson they offer organised trips, Cairo, Luxor, Ras Mohamed, Quads, Star gazing, Dahab to name just a few. There is a thread about trips which you could read. May be a good idea to go to the welcome meeting get all the leaflets then decide. If you are confident there will be people in NB you can book the same trips with but for less cash. The other major pastime is snorkelling and diving. Plenty of info on HT about this as well.
You will need a visa if you go on any of the longer trips which take you out of Sinai. You can get these at the airport for $15 per person. You also need Hep A and Typhoid jabs if you haven't got them, plus your triple needs to be up to date (DTP - the one we have for this country). Most take a small amount of Egyptian currency to get them through the first day & the rest in sterling & change it there as the rate is better.
There is a map here which will give you a perspective on the layout of Sharm.
The Mirabel complex is 157,158 & 159 on the right hand map.
