The in-laws are there as I write but in their usual style they didn't bother leaving us details of where they have gone. GRRRR. They went to a hotel that had been recommended to them so I'm annoyed I can't pass on the details as the description sounds like it would fit your requirements exactly.

The Best Western Le Donjon Les Remparts and its licensed restaurant have a unique location at the very heart of the ancient Cather fortress city of Carassonne. Located two kilometers from tennis and horseback riding and 5 kilometers from golf
its in the walled town but might be expensive but if you are only there 2 nights worth a look at its really lovely.
