As for the cruise, why not book flight only to Luxor combined with a couple of nights in a hotel and take the shortest cruise option (a 3 night cruise), which will leave you in Aswan.
From there, you will either need to transfer back to Luxor by road or by train.
We just came back off a cruise last month booked with http://www.memphistours.com (Mr Sherif) and paid $180 each for a 3 night cruise on Presidential Nile Cruise ships (official rating 5*), which included all meals on board ship plus all excursions during the trip.
Then again, you may be able to pick up a package deal for a similar cost to doing the whole thing yourselves.
The excursions we took only lasted 2 and a half hours at the longest. Our guide took us around each site and pointed out the interesting parts and told us a brief history of the story behind each monument. Then we were allowed time to wander around ourselves with a time to meet up for the return to the ship.
Once the excursions are over, sometimes the ship will set sail but other times is moored for a while longer to allow you time to explore on shore.
We've been to Egypt a number of times previously (this being our 5th trip) and this is the 1st time we have taken in the cruise. We really enjoyed it and it's a relaxing way to do the tour.
Personally, if I had a choice between a beach holiday in Egypt (Red Sea) or seeing sites over 4000 years old - there would be no contest. I just cannot class a holiday to the Red Sea as being the "real" Egypt. But - each to their own.....
Prices - are very cheap! A large bottle of local beer (Stella local) costs around LE9 (£0.80) to LE20 (£1.75) depending on the class of establishment you are drinking in. A meal in Aswan for 4 of us including our drinks (some on wine and others on beer) came to less than a tenner.
