For apartments try http://www.villarenters.com and http://www.homelidays.com and cheapflights.co.uk for flights. Check which major tour operators fly from Glasgow and monitor their sites as well. It can work either way; sometimes I get a good deal by booking the flight early, but if you are prepared to gamble you can also do well leaving it to the last minute. Not suprisingly the cheapest flights are to be had at the least popular times of year.

Can't help with accommodation but for flights I would recommend you try http://www.cheapflights.co.uk/flights/Monastir/Glasgow/ I have them in my 'favourites' and admit to being sad enough to check them almost daily for flights from Stansted, though I'm pretty sure I'll have to wait a while before I get a decent price for early October. The best thing is that all prices shown include taxes, so there are no nasty surprises.
