Tend to find transfer days are quieter. You'll have a ball 
i've been told saturdays are the best days to visit, they tend to be quieter because of people coming and going
Definitely Wednesday is the quietest day we found. Wednesdays and Sundays are the busy changeover days and the Sundays get busier than mid-week with the Cypriots going there too.

My wife checked out the water park @ Paphos on Saturday (21st July) and thought it wasn't too busy - perhaps change-over days as previously mentioned.
Don't forget to claim your Vouchers from Papantonio's C£5 discount if you spend CY20 in the supermarket.
Looking forward to visiting the Waterpark acouple of times this trip.

If your going to Fassourri in Limassol. The best day is definately wednesday. Its transfer day. Not a lot of Cypriots go either. Whereas if you go on saturdays there tends to be a hell of a lot of Cypriots.
