Go to Glasgow airports website it will show you all the companies that fly to Dalaman

Your best bet is to use goldtrail but dont use the accomadation, As you have already booked your accomadation just use the flight and the transfer then get a Taxi to your accomadation, At the end of your holiday just go to the hotel you were supposed to be at and get your transfer back to Dalaman, Just inform the Goldtrail reps your doing this, Goldtrail are by far the cheapest going to Turkey.

Companies flying from Edinburgh are Thomas Cook but I dont think they do flight only on their website as they use the Monarch Airlines (Friday) and seems to come up only with accommodation. First Choice not sure off, and agean flights which is the Onur flight and only goes from 10th June-Sept I think, but they do seem to be a lot cheaper.

We flew from Glasgow - Dalaman last year with First Choice (flight only). They were by far the cheapest at the time we booked. Not sure of their schedules for this year though.
