Generally cash is the only option. As you would expect you change these up for chips. If somehow you end up with chips left, you just exchange them for cash at the pursers office.
The games are normally Roullette, Blackjack and a few variations of Poker.

When we were on you could charge casino money to your on board account
There was no Texas hold um only caribbean stud I cant remeber there being a roulette table and the casino was very small

The Spirit does have a roulette table. If memory serves me correctly, there are two blackjack tables and two poker tables (usually stud) plus half a dozen fruit machines. They do quite a few "fun" sessions and the atmosphere is very informal. They are quite strict about under 18s, though; my kids weren't allowed to stand and watch me lose my money!
IIRC the roulette table was jammed in against a railing and wasnt much room round it. One side and the end of the table only.
