Hi britmark
From what you are saying, I would think a 4* AI would suit you down to the ground.
Read a lot of reviews and try to get something that suits your needs. As people say going AI certainly doesn't preclude you from seeing a place. There is a lot of sterotyping on this board about the type of people who go AI which for the most part I feel should be ignored. I have been AI in Greece and Turkey, but I would say Turkey had the edge for me.
LOL Sandra, we also drank the AI alcohol at the Belcekic Beach and intend to at Lykia, it was just local stuff, larger style beer, red wine etc, but we were happy with it, it helped the food along nicely.
I only posted it so that the OP would be aware that to get branded spirits on AI is very very unusal. It's important to some people and not to others. If I want to drink Pimms I'm aware I have to take it with me. I would rather have the hotel spend money on quality food, than Bacardi, Gordons Gin, Bells Whiskey, Baileys etc.
I think it is unrealistic to expect most hotels to provide this anyway, unless they are mega expensive (although apparently Letoonia does) they have to make some profit after all.

We also venture out and take day trips to "see" Turkey.
In my own experience it is other nationalities that stay "on resort".........
