Does it have to be AI?
If not, the Sirenis Seaview Country Club in Port D'es Torrent, Ibiza is well worth a look. We went in 2006 and are going back in exactly 8 weeks & 4 days (not that i'm counting :D)
They dont do AI though, if you do decide on it book SC and upgrade to HB when you get there as its loads cheaper than going HB with the tour operator.
