Thanks for all your replies......I'm just so glad we're booked and sorted as it was starting to become a chore rather than something to look forward to (thanks to a fussy travel buddy of a brother !)

We'll definitely venture out to eat and drink in NB, we could probably do the shuttle bus in and taxi back

I've also been recommended a boat trip with a dive company (Emperor) where a friend of a friend works who does "friends & family" rates, so that should be a good day out.
