As far as I know, the only thing that has changed is the rate. The prices in the restaurants haven't really gone up much. We are going a week today, so I will let you know when I get back.

I don't think you are going to find much difference in prices from your visit of three years ago, as Pebbles has pointed out it is the rate that will make you feel the pinch. I have heard all these comments from people saying Vegas is expensive but the individual really has the final say. If you don't like the costs on a menu move on.
Clearly from you mention of the Cheesecake Factory, Grand Lux and Outback, you are very much at the same "food level" as we are, and no doubt you appreciate good quality food and value. I think there is always a time and place in Vegas for a good blowout, but dining doesn't have to be expensive.

Yes prices are pretty much the same as last year and the year before, just the drop in exchange rate making it more expensive.

HERE is my trip report from last year with prices of most things we came across. Add a couple of dollars and you're there. I'm posting my current TR at the moment so keep watching.
