What I'd recommend not to be missed if you are anything like us and want to see Cyprus and Cypriot life and history, food and culture etc...
Big Red Bus tour, trip around Pernera, Protaras, Ayia Napa areas seeing the old villages, seeing the division of the Island, learning about day to day life, the history and many other bits and bobs.
Jeep Safari up the Troodos Mountains - depending on who you book with will depend on where exactly you go and what you will do etc (we booked ours from Trackers in Pernera just up the road from Protaras and saw lace and silverware, went on a fantastic off road adventure up the mountain, had a meze lunch (paid for seperately when booking usually), went swimiming in a lake, saw some dams, an old church and plenty of other things...
Boat Trip - We had a day out swimming, eating, sunbathing, sight seeing, diving from the rocks, generally have a good laugh (booked with Mike in the Nautilus Trattorria in Pernera)

You get it from just outside the Sunrise hotel, captains a bit mad!... I would say though, make sure you take your own refreshments as its expensive on board.

Boat trips depend on your taste, for a bit of a thrill, seeing the Ghost Town of Famagusta, watching cliff jumping, swimming in blue lagoon and the chance to see Dolphins, take the Raptor from Pernera harbour http://www.manic-ribs.com. If you want something more sedate then take a walk down to the harbour or visit a tour shop in Pernera protaras.
Popular overland trips are to the Troodos mountains however, I would suggest a trip to the North. Famagusta, or a combination of Famagusta/Kyrenia with a stop off at Bellapis & St Hellerians Castle.

Kykko monastery probably the most famous on Cyprus day trip includes a few other churches and the tomb of Makarios 3rd [ females please make sure you ware cloths that cover your arms ,legs, and chest, silk wrap will normally suffice]
old Cyprus a day round the villages still very traditional
others subject to availability... scuba diving, submarine trip various jeep safaris, donky riding,Cruses [2/3 days] Cairo, egypt [including Alexandria], Beirut, Rhodos [Rhodes] and finally a selection of half and full day boat trips
