I'd like to recommend Stalis to you. Sis and I (with hubbies) stayed there last summer and had a really fab holiday. We are in our 40's and 50's and seem to like the same things as yourselves. Take a look at the Stalis resort reports on this site. We can particularly recommend the Socrates studios and apartments which are in an excellet position between Malia and Stalis. Again, take a look at my hotel review to give you an idea of what it was like. If you need any more info on Stalis or the Socrates don't hesitate to ask.

Stalis is fine as a place itself but it's just not in the most beautiful part of the island. If you want a combination of stunning mountain scenery, the best beaches (not too crowded), real Cretan life and loads to do then head west of Chania. The venetian port of Chania itself is unbeatable on the island and the area is tastefully developed. Have a look at pictures of Falasarna Beach, the Samaria Gorge and the harbour at Chania.....and up in the mountains it really remains unspoilt by the excesses of British tourism. Check it out. Those that discover the west of Crete find the real heart, soul and beauty of the island. I've been visiting all parts of Crete since the 1970's. It's a great island.
