Dont know of any child free hotels in Sharm, but you might find that if you pick one of the more expensive bed and breakfast hotels, like the Hyatt, the Savoy, the Ritz Carlton etc and go outside of the school holidays you can limit the amount of children that are at the hotel. Lots of families like to go AI and in school holidays for obvious reasons.

Perhaps if you could find somewhere with an adult only pool and no kids clubs etc it would suit rather than a Holiday Village environment.
