Not many suggestions so far, so to get the ball rolling here's what I really enjoyed and some bits might be worth considering if he hasn't already tried going Uptown :
A taxi, or much better, a 20 Rps bus ride into Panjim, crossing on the ferry if early enough, then an early evening (you wanted "MAD!") Paradise mini cruise from under the Mandovi bridge, incl dancing with the fantastically intense (mainly male) local dancers for I think around 200 or 300 Rps incl a beer; great for getting well in the mood before finishing off the evening at The Crown Hotel restaurant with those fantastic views looking down the Mandovi river. If you're paying then maybe it's just a drink there on the terrace and then on to the Navtara excellent vegetarian restaurant. If yer dad's paying -make it the Delhi Derbar.
Possible to do it for less than 500Rps for the night each, or as much as you want to throw at it at The DD.
I'm sure some of the 'expats' will have some other great ideas and the rest is up to you.

Lots of nice up market dining places about, Fiesta in Baga, J&A's Italian Baga creek, Chef Soumyens Kitchen on the way to Candolim, Oriental Thai Restaurant in Holiday Street, Calangute but think the best places in Holiday Street are A Reverie or Le Jarden but sounds like a front row seat in front of the big TV in a sports bar and a bit of cake would be appreciated just as much
