I know, a very open question..........
We are a couple, looking to go away over Christmas and New Year this year, I know it's never going to be 'cheap', but would really love to hear your recommendations in order that we can make the right decision for us, as we've never been away from the UK for Christmas.
We're not particularly party type people, we love to go sightseeing, prefer beach locations, husband is a qualified diver. We do not have a specific budget in mind, but that will probably change upon further investigations.
The usual suspects would be the Maldives, Thailand (I know real big country), but we've never visited either, but we are very open to suggestions.

We were lucky with the weather and were in the sea on Christmas day.
It was very laid back and the hotel put on a superb Christmas Eve gala dinner
It may not be exotic enough for you but we are limited to Europe now by our travel Insurance even though Tunisia is in Africa.
Surprisingly it was cheaper than going on a 5 day coach trip in the UK.
Perhaps one of the Red Sea resorts excellent for diving, if you choose Hurghada that would also let you visit Luxor for some amazing sightseeing.
Jay Trip - Sadly, we had our worst holiday ever in Tunisia and I'd never get my husband to go back, but we know so many people who've had the best of times there.
Kiltman - we've done Egypt on several occasions - but can see us going back...... Sooner than we thought if we can't find anywhere else.

I would say Thailand, a few days sightseeing in Bangkok then relaxing at a beach resort (or the other way round). I haven't been there exactly at Christmas, but I was there just before on one holiday and then over New Year another time and both times the hotels had made a huge effort to get into the holiday spirit and the weather should be perfect for a beach holiday.
We always go to Goa over Xmas and new year perfect weather fab good and very cheap too. Have a look on the Goa Forum loads of chat about the place
