Spend at least a few days in Ubud. It is a special place. Go to at least one temple dance whilst you are there. They are a feast of tradition, colours and sounds. You may be lucky and see a cremation. Bali seems to have a festival every other day so there is always something to see.
For the beach part of the holiday, it depends on what you like to do. Personally, we had one night out in Kuta and hated it. We love Sanur though.
Take at least one day to tour around the island. Seeing places and people in villages who don't come across many tourists is great. If you have a local driver/guide you will learn so much about Bali.
The rice terraces are breathtaking!
