We liked Es Castell, there are about 3 inlets there, 2 of them harbours, and one a little beach. There are lots of restaurants along the harbour which are busy in the evenings. You can get boat trips from there too. it is all very pretty.
Es Castell is not a long transfer from the airport, and you can get buses from it to the capital, mahon, which is worth a visit.
The only downside of the resort is that there is not much beach, but that may not be a problem to you.
I've been twice and am going again in August. It's a lovely quiet hotel and the staff are really friendly.
