Have you tried Citalia?
I'm sure they take bookings from early April.They are part of First Choice so if you go into a FC Travel Shop you should get a discount.
I have booked with them a few times and always been well satisfied.
You could also try Magic of Italy part of TUI group.

You might also look at Crystal Italy but I don't know when they start for the season. We stayed in an apartment (Boscoverde) with them in a converted farmhouse midway between Pisa and Florence. Car hire was included, as it was set amongst olive groves and vineyards. It was wonderful for touring Tuscany, we went mid May when the hillsides were full of poppies. Must go back sometime!

Hmm Citalia keep saying 'this holiday is not bookable during this period' so perhaps April 1st is too early to book?

We went to Tuscany last October and stayed in Casa di Luce in Lucignana for a week. We are hopefully returning next summer.

It is situated between Pisa and Barga. The scenery is magnificent. Florence is very easy to get to by train from Lucca and you are not too far from the coast.

If your looking for very nice private accomodation in Pisa you could do much worse than to give this a try http://www.ussero.com we have stayed here and it was a very nice safe appartment at a very reasonable price, in a very accessible place for Pisa and the inter city transport newtwork, and for trains to Firenze and Tuscany in general.
