I went to Santorini last year and has a fantastic holiday . We went in August so unfortunately cannot help you wth the weather in May. Have a look at http://www.wunderground.com You can search the weather temperature for previous years.

We stayed in Kamari which was a very nice resort with lots of lovely restaurants and a few bars. One thing that can put people off is the black sandy beach, this wasn't a problem for us as we prefer to stay by the pool. The bus service in Santorini is fantastic so it's very easy to visit other places on the island.

I unfortunately did not visit Perissa so can't comment on the resort.

Not sure what type of accomodation you are looking for but we stayed at Kafouros studios. The apartments are basic but that didn't bother us as we hardly spent time inside! Have a look at http://www.kosmar.co.uk

We stayed in Perissa, great holiday. Look at Kosmar Holidays, Hotel Smaragdi Village, excellent Hosts who put on a superb Greek Night on a Saturday. You won't be disappointed with the Apartments either.

I would recommend Kamari or Perrissa - both are lovely!

As far as Santorini is concern, I believe that Kamari which is a south-eastern seaside resort is an excellent place to stay. It has night clubs, restaurants, and cinema, water sports, beautiful beach for which the residents are proud of and much more things to do. It is not so far away from the capital, which is Fira, and it is much cheaper than the capital. There is a regular bus root to Fira and it is only 15 minutes to reach the capital.
