we looked in a shop in Panjim for some Balti dishes and they seemed to have some decent stuff, no sure if its up to professional use though. It was behind the Lacoste shop, more or less opposite the Delhi Durbar but one street behind.
As for bringing in a suitcase, dont see why not, but ask when you check in on leaving UK.
there was also a shop in Panjim market that was similar, along an alley by the flower market.

I brought two knives the other way in the case (one quite large chefs cleaver) through Heathrow, Mumbai and Goa with no problems.
I had to open my case at Mumbai though because of the old mobile I bought for friends and the 3 litre box of wine which has foil inside the box, they thought it was baby milk at first!!!

Panjim - Viranis, next to coffee day or Mansur Enterprises on the same road as Mr Bakers.

Mapsa - Viranis, in the market or a lady called Sangeeta (also in the market). If you ask for the metal shop or the pan lady most people will know her. She has everything you'll ever need for the kitchen and she's very reasonable.

My friends husband is a chef, he bought some knives in Feb and as far as I know he didn't have problem taking them back home.

You could try asking the chefs in the restaurants/hotels where they buy their knives. The only thing is a lot of them are from out of state so may not have bought them locally. I've brought knives back from the US to N. Ireland in my luggage with no problems.

Be sure to let us all know how you get on with this -I am a chef too, and getting some exotic stuff is always a source of fun (and envy  )

Hi, I'm Not a chef by any stretch of the imagination but had some lessons from a chef while there. I can now make my own Tandori pastes, butter chicken, goan fish curry. Am the envy of all my friends, I also brought back some utensils and spices. Just waiting for the hubby to build me a clay oven outside.
The knives can be brought back in hold luggage but it's a good idea to put them in hard boxes (I'm sure you will find plenty of wooden there).
