The bigger hotel chains who have leisure centres like Village leisure, Hilton etc might be ok for veggie food but depends what special diets you need?
I try to stop in veggie hotels, but if im in a big chain i end up taking things like soya milk and eat out as the big chains are not in my view good at special diets/allergies or vegan food.
If you decide on an area try to get the local tourist baord brichure as they have a key in there about veggie food/special diets.
With enough advance notice - ask to speak to the chef or reception manager you might find somewhere.
If in Wales the Trefaddin (wrong spelling?) does special deits and veggie and has a pool, great hotel!
