Hi Laura ... just in case you haven't spotted it yet, we also have a DIY Holidays forum, where you will be able to pick up info and advice about the pros and cons of DIY ....
I live in Edinburgh and find that Flyglobespan are very cheap for flights from Edinburgh or Glasgow. I've booked my two week holiday for next June already because the flights were only £100 per person.
As far as accommodation goes, I tend to use various websites to find a good deal, then contact the hotel/apartment direct to get a price from them - it usually works out a lot cheaper, although I'm loving Travel Republic website just now.
Hope this helps.
Carol-Ann
Hotels are easier to find than flights, book your hotel through winter sunshine holidays.

We went Fly Glopespan in June to Salou Princess. Trip from Airport was over an hour but that was the only bad thing. Everything else was fantastic and the price was unbelievable so good in fact we're doing it all again next year
