I would say try the Iberostar Varadero.
Iberostar run just about the best AI hotels in the Caribbean and there new hotel in Varadero has been getting fantasic reviews since it opened about 2 years ago.

Totally agree, when I looked into Cuba the Iberostar Varadero looked to be the best of the bunch.
