There's a big funfair in Tunis, called the "Dahdah park." Not sure about opening hours, we went in the evening last October and had a great time. Very cheap, and at that time of year, no other white faces at all!

We went to PEK last year, and are going back this July.
Also, while not strictly an amusement park, there is a great Safari/zoo type, called 'Friguia Park' and this can usually be booked as a day trip through the holiday company, or independently at the hotel.
There is also a very small zoo/botanical garden right next to the entrance to the port at PEK - has various large and small birds, baby camels, etc.
We went to all of the above with our little 'un and he loved them.

There is also Carthage Land in Hammamet Yasmine.
Adam Park in Monastir is also a fairground.
everytime I've been past Adam Park fairground it always seems to be closed never seen it open once
