You probably looking at Paphos to be honest. I personally haven't been to that end of the island as I always go to Protaras on the east but looking at your requirements I think Paphos would be your better option from what i've read on here.
Paphos is an all year round resort. It is a local working town as well as a tourist resort area. With that it is always bustling.
We are heading out over the Easter break and are looking forward to explore more of the region this time such as the unspoilt Akamas Peninsular and the Troodos Mountains.
Paphos has much local history including the Tombs of the Kings and the Mosaics at the Harbour, both 1/2 day excursions.
There are a couple of go-karting tracks in Coral Bay & Paphos.
There is also water parks but I do not think that the water is heated and may be on the tepid side over Easter.
Areas such as Tombs of the Kings, Kato Pahos and the Harbour have many bars, restaurants and shops open all year round.
I'm sure Greek Easter coincides with Easter in the UK this year so we hope to see some traditional celebrations.
The best beach in the area can be found @ Coral Bay, but there are many smaller coves along the coastline.

Good luck and have a great trip.
