Unless she wanted to see the Basilica and Shrine, then Knock itself may not be worth the visit. Almost all of the shops in Knock (and there aren't many) are involved in the sale of merchandise related to the Shrine.
Knock is around 8 miles from the airport, Charlestown is slightly nearer but also very small.
Ballyhaunis is around 10 miles from the airport, Claremorris 15 miles and Westport 25 miles. Any of those would have more in the way of shops, bars, restaurants, etc. However, the biggest difficulty may be public transport, she may have to depend on taxis.

I suspected as much. Apparently there is a shuttle bus from Knock town to the airport, which is why she was considering a schlep around Knock.

Hi there my mum lives in Co Mayo near Knock. Im still in England.
A great place to to go to is Ballina a really nice beach there.
Kiltimagh has a nice bakery in the most strangest place in a back alley. They do nice doughnuts and really nice fresh bread.
