As the first season following Bulgaria's admission into the EU hasn't yet started, it's almost impossible to advise you. Until the first tourists of the season (which will probably include you, as you are going in May ) report back, we have no idea what effect EU entry may have had on resort prices.

I was in Varna, Bulgaria last month, where I found that prices in general had risen very slightly since last September - however this small increase may (or may not) be reflected in the resorts, which tend to have much higher prices than 'real' Bulgarian ones anyway.
