Only at night, you must dress formal and your husband must wear long trousers.
Don't worry about your outfit, most of the times is just to make sure that men wear long trousers, that's the important thing.

We were at a different Riu just down the road and the signs said men must wear long trousers and no sleeveless shirts, so I think your husband should go prepared for this to be the case. Most 4 and 5 star Med hotels do seem to have this rule.
