I have never been so maybe not the best person to give advice!

But...I am going this year and researched it a bit before booking and got some good advice from here as well.

We plumped for La Luna Apartments through First Choice in the resort of Troulos which is supposedly fairly low key but with a good choice of tavernas.

Skiathos Town is not too far by bus apparantely.

La Luna has good reviews generally on the net. I can let you know first hand when i get back at the end of May!

Basically you will have to compromise. Places outside Skiathos town will be too quiet, no resorts as such, and Skiathos town will be much noisier than the places you mention.
Skopelos town on the next island would probably match your needs better.
