Have you booked accomodation? just christmas and new year are the busiest weeks of the year and get booked up pretty quickly.
I'd recommend the south as its better weather, the "upmarket" area in the south is Costa Adeje in Las Americas. Its all 4 and 5 star hotels, not sure what the villas are like if there are any as i always go to apartments.
you wont be disappointed with tenerife, ive been that time of year 6 times now (the last being last year) and its still brilliant. lively with great weather and lovely sea front walks.

Costa Adeje through to Bahia Del Duque and on to Caleta should meet your needs.

Yeah La Caletta is beautiful - i stayed there about 10 years ago when it was just 1 hotel and a little shop and restaurant, views were amazing. Its now kinda blended in with Adeje and made it even better. So look around that area as well as Adeje
