Get a taxi into Lindos - it's much livelier and better suited to a stag night than Pefkos. May is still early in the season so it won't be overly busy but Arches Nightclub is fairly busy anytime of year. Plenty of bars in Lindos too - 60s, Manolis, Antika, Pals and Lindos by Night are always popular and there's Giorgos if you like sports bars.
Orfandinou St in Rhodes Town would be the best place in high season but in May it won't be that busy so it's not worth the expense of getting there and back really.
