There are two parts to Sun Beach. Sun Beach 1 and Sun Beach 2.
Sun Beach 1 is on the beach (stones, not sand) is a slightly higher standard and has a more relaxed feeling about it.
Sun Beach 2 is on the other side of the road. appears to be of a slightly lower standard although it is a lively hotel with a mix of nationalities - has a lively (read tacky) entertainment regime that runs most days.

Both parts of the hotel are of a reasonable quality. The rooms are of a fairly good standard.

There is a mix of b&b, half board and full board in the hotels. The food is of a reasonable standard.

Both hotels have pools, the one at SB1 is slightly better.

In general, the resort is well developed, plenty to do and plenty of choice for food and drink. Not too far from Rhodes Town for a 'big night out'

The only thing I would say is watch out for the timeshare sharks (RCI - Club Greece) They use Sun Beach 1 as their base and you will enevitably meet a pushy timeshare tout during your stay.

I am going self catering, does it mean i will be in a certain part e.g 1 or 2??

You will most likely be in Sun Beach 2. This side has a pool in the centre surrounded by accommodation blocks. the reception / bar area are pleasant enough. there is entertainment (multilingual) most days and nights this can get on your nerves after a while. There are plenty of other places to go if you are not happy with whats on offer at the hotel. The facilities at the sister hotel are also available for your use if you prefer.
The rooms are ok, there is building wide a/c in a lot of the rooms. this is not quite as efficient on the higher floors as it is on the lower ones. Cooking facilities are somewhat limited, but you can knock together something if you prefer to eat in. The hotel is surrounded by restaurants, you will not have a problem finding something to your liking. There are a few shops nearby that sell pretty much all you will need in the way of food and provisions.
