On your Troodos trip carry on over the other side of the mountain to Kakopetria.

Don't miss Kourion (or Curium) and the Sanctuary of Apollo which is nearby on your way back from either Nicosia or Limasol, and also Petra Tou Roumio (Aphrodite's birthplace). Take the coast road for part of the way as opposed to the motorway. It's a more picturescue route anyway.
And if you go to Latchi and Polis, have lunch at Y&P's Seafood Taverna - probably the best in Cyprus and very reasonably priced too.
If you go onto the Akamas to get to Lara Bay and Viklari you ARE insured as you're using graded roads (ie dirt tracks, but they still class then as roads and they're also on maps).

If you have a free hour or two visit the market in Paphos, buy some bargains and have a pint of orange juice, squeezed before your eyes.

I always love a good market, when is the market on and how do you get to it from Limassol.

It's in the old town, at the top of the hill and is open from 9 to 2 monday to saturday (closed sundays).
They sell leather goods, jewellery, ceramics, etc. etc as well as local farmers fruit and vegetables.
I alsways go there to stock up on things like herbs and spices, some of which are really cheap, like Saffron (costs a couple of quid in the UK for half a dozen strands whereas I'm only half way through the huge jar I bought in Paphos a couple of years ago)

I'm sure you'll find an equivalent in Limassol
