Are all flights to Turkey night flights ??

no, but a high % are at least a night flight 1 way , you could book a day flight pay more and then it gets changed to a night flight which seems to have happened a fair bit recently 
A lot of flights do seem to be night flights but there are day flights, we always fly in the day; Thomas Cook, Monarch, Thomsons and Easy Jet all have day flights. They are more expensive than night flights though.
